Charlie makes the grids from previously manufactures, heat-treated, stainless-steel grilling grids. Then I add 172 stainless steel screws, and stainless steel handles. The grids are 100 percent stainless steel.

How long will a Shellfish Grilling Grid last with "normal" use?
Your Shellfish Grilling Grid will last many years, or indefinitely, with normal use. Stainless steel does not rust, but it will become discolored with burned on food.

Can I place it directly in hot charcoal?
Do not place the grill directly in hot charcoal because could turn red hot, become weakened, warp, and eventually disintegrate.

After using the grid, brush off any debris using a stainless steel-bristled brush. The grids are dishwasher-safe.

The racks are crafted with hand tools from expanded, raised sheet carbon steel. Charlie is the sole maker. Because they are hand-crafted with hand tools, each one is slightly different, but they all fit the advertised specifications.  |

Why not offshore the manufacturing?
We need to do more manufacturing in the U.S.A. Items made here keep the work and resources here at home. Manufacturing in the U.S.A. is done in a more environmentally friendly manner.  |

Why isn't there a handle for the Shellfish Cooking Rack?
A handle would take up space that you can use for BBQing oysters instead. You can use a pair of pliers as a handle. I find that channel lock pliers work the best.  |

What else can I cook using the Shellfish Cooking Rack?
Corn-on-the-cob, twice baked potatoes, even ribs, anything that will fit in it, although it was designed with oysters and other shellfish in mind.  |

How many oysters will fit on a Shellfish Cooking Rack.
Oysters are marketed by size: x-small, small, medium, and large. Usually people prefer to BBQ, grill, or bake either medium or large oysters. As shown in the photos, you can fit nine large oysters or a dozen medium sized oysters on a Shellfish Cooking Rack.  |

I've got some oysters in the shell. Where do I start?
Oysters in the shell should only be consumed if they are alive. Live oysters are tightly closed. If you see an oyster that is slightly open, tap it. If it snaps shut, it is okay. If it doesn't close, it's dead and should be discarded.  |

Should I wash the oysters ?
Oysters are washed at the farm before they are sold; however, it's a good idea to wash them again before you open them. This will help you avoid getting mud or other debris into the open oysters. I always use a sprayer and work in a bucket so avoid getting mud and other debris down my drain pipes.  |

What's the recommended best way to shuck oysters?
There are several ways to shuck (open) oysters. Here is one of them. While opening the oyster, try not to spill the oyster liquor (the liquid inside the oyster). The oyster liquor is an important part of the experience of eating oysters raw or BBQed.
- Insert the tip of your oyster knife between the shells on the pointed end to penetrate the ligament.
- After penetrating the ligament, give you knife a twist to pry the top and bottom shells apart.
- Carefully slip your knife back into the shell and cut the abductor muscle that hold the shells closed, and then lift off the top shell.
- You may see some shell debris on the bottom shell. Be sure to remove it with the tip of your knife.
- Slide your knife under the oyster to cut the abductor muscle on the bottom shell.
- Gently run your knife around the oyster to make sure that it moves around on the shell freely.
- Place your newly opened oyster in a rack/grill. Find the best position to keep it from tipping and spilling its contents.

How do I BBQ, grill or bake oysters?
- As you open your oysters, place them on your rack/grid that is sitting on a 1/2 sheet pan. There will be a sweet spot on the rack/grid where the oyster will sit securely upright.
- When your rack/grid is full of oysters, add 1/2 to 1 tsp of sauce to each oyster.
- Next, place the rack/grid on your BBQ/grill, or in your oven.
Note: For baking oyster in the oven, leave the rack/grill on the 1/2 sheet pan to prevent spillage inside your oven.
- In 5 to 15 minutes, the oysters begin to bubble and sizzle. The amount of time it takes for each oyster to cook depends on its size and shell thickness. Small oysters will cook much faster than larger ones.
- When the oyster is bubbling, remove it from the grill and place it on a 1/2 sheet pan.
- Serve the oysters right from the rack/grid on the pan.
